Low Carb Keto Breaded Garlic Chicken Thighs

A delicious and easy way to jazz up your chicken, especially if you miss breaded chicken. Even non-Keto or non-LCHFers love this dish, and it tastes just as good as leftovers the next day! You can't go wrong with this recipe. For those who don't like garlic, you can leave out the garlic powder and use salt and pepper, and you can use regular Old Bay spice instead of garlic flavored.  And of course if you prefer a different flavor of Pork Rind, you can certainly swap out whichever flavor you like best. 
Ingredients:
1 pound of chicken thighs
Pink Himalayan Sea Salt
Garlic Old Bay Spice (Original can be used also)
Garlic Powder
4 ounce bag of BBQ pork rinds (Original or any other flavor can be used if you prefer)
2 eggs

Directions:
1. Preheat oven to 350F 

2. Season chicken thighs with salt, Old Bay and garlic powder.
3. Finely crush pork rinds. I used my Vitamix, but you can also just put them in a zip lock bag and rolled them with a rolling pin. Make sure you remove any large uncrushed pieces, then transfer them to a bowl.
4. Beat the eggs in a separate bowl.
5. Grease or oil a glass baking pan, or line a cooking sheet with foil.
6. Dip the chicken in the egg, then thoroughly coat with pork rind, and then place in pan.
7. Bake in the oven for about 20-30 minutes until golden and crispy, or until internal temperature reaches 165 degrees
