Instant Pot Queso Chicken Soup (KETO)

I whipped this up last night for a quick and tasty winter warm-up soup!! Fast, simple and delicious!! Make extra to freeze!!  Instant Pot Queso Chicken Soup Ingredients 1 lb chicken breast 3 c chicken broth 1 Tbs olive oil  1 can diced tomatoes w/ green chilies 1 Tbs taco seasoning (you can make your own) 8 oz cream cheese, cut into cubes 1/2 c heavy cream 1/2 c shredded cheddar cheese Directions 1) Put Instant Pot on saute, add oil. Stir in the tomatoes and taco seasoning. Cook for 2 minutes to toast the spices.  2) Add the chicken and broth. Add in cubed cream cheese. Close the lid and seal lid. Cook on high pressure for 15 minutes. Once done, release pressure and remove chicken if you want to shred the chicken. LCHF Keto-Friendly Karaage Chicken

I am a huge fan of Japanese food, and one thing I truly miss since starting to eat Keto is karaage chicken!! I decided to try my hand at a keto version, and it turned out pretty good!! Even my non-keto friends enjoy these!! You can serve it with the dipping sauce of your choice, I use Japanese mayonnaise with a tiny bit of garlic. First, gather your ingredients:  INGREDIENTS:  Organic chicken thighs, cut into bite sized pieces 2 TBS coconut flour 1/2 tsp ground ginger 1/2 tsp smoked paprika 1/2 tsp ground pepper 1/2 tsp salt 1/2 tsp garlic powder  EXECUTION:  Cut chicken thighs into bite sized pieces Mix all of the dry ingredients together in a large plastic Ziplock bag Toss the bite sized chicken pieces in plastic bag until coated evenly Heat keto-friendly oil of choice in fryer to 350 - 375F    Fry chicken pieces for 6-7 minutes in small batches    Serve Hot with Dipping Sauce of Choice....

The Most Delicious LCHF Cheddar Ranch Baked Chicken Thighs EVER!!!!

This is possibly one of the greatest recipes I've ever made - everyone that I have ever made it for has loved it!!! Leftovers don't last long!! This recipe is definitely in my rotation, and comes up a lot because of how delicious it is, but also how simple it is to make and prepare!  LCHF Cheddar Ranch Baked Chicken Thighs  1/2 cup mayo  of choice (I use homemade, because I usually have it on hand) 1/2 cup shredded cheddar cheese 1 oz. package of Ranch   dressing and seasoning mix 3 cloves minced garlic 6-8 skinless, boneless chicken thighs salt /pepper to taste 1/3 cup crushed pork rinds 1) Heat oven to 400F and oil a 9x13 baking dish (I use coconut oil) 2) In a small bowl, whisk together the Mayo, cheese, ranch powder and garlic 3) Season the chicken with salt and pepper 4) Place the chicken in a single layer in the glass baking dish 5) Spoon cheese mixture over the top of the chicken thighs, covering them as much as possible. 6) Sprinkle the crushe...

1 cup Unsweetened Vanilla Almond Milk 1/2 cup Heavy Cream  1/2 cup cold brewed coffee (or 1 cup if you prefer a stronger coffee taste) 4-5 ice cubes 1 splash sugar-free flavored syrup of your choice of flavor (ex. Torani)  Blend for Frozen or just hand stir and serve for iced coffee

AVO-BLUE SMOOTHIE  1/2 medium sized avocado  1 cup Unsweetened Vanilla Almond Milk 1 TBS Half and Half 1/4 cup blueberries 1 splash sugar free almond syrup (ex. Torani)  1 splash sugar free coconut syrup (ex. Torani) 4-5 ice cubes 1 scoop Isopure Zero Carb vanilla protein powder Blend until smooth and Enjoy!

This could pretty much just be called "Heaven in a Bowl" for me. This is one of my favorite recipes ever, not just LCHF. It's just an incredible added bonus that it's LCHF! Ketofied Cheddar Garlic Biscuits a la Red Lobster I used to be addicted (and still am, I just have to exercise self-restraint nowadays) to those cheddar garlic biscuits at Red Lobster. Just thinking about them makes me start drooling and takes me to my happy place... So I set out to try to make a keto version of those. Here's what I've come up with so far...
