Ketofied Cheddar Garlic Biscuits

Ketofied Cheddar Garlic Biscuits a la Red Lobster I used to be addicted (and still am, I just have to exercise self-restraint nowadays) to those cheddar garlic biscuits at Red Lobster. Just thinking about them makes me start drooling and takes me to my happy place... So I set out to try to make a keto version of those. Here's what I've come up with so far... Ingredients: 1/2 c coconut flour 1/2 c almond flour 2 tsp baking powder 2 tsp garlic powder 1/2 tsp Himalayan pink salt 3/4 c shredded cheddar cheese (divided) 4 large eggs 3/4 c Sour Cream (full-fat) 1/4 c Kerrygold butter, melted Directions: 1. Preheat oven to 350F 2. Line a large baking sheet with parchment paper. 3. In a large bowl, whisk together the coconut flour, almond flour, baking powder, garlic powder and salt. 4. Whipped Dream INGREDIENTS:  1 small package sugar free jello, any flavor 4 ounces cream cheese, softened 1 Cup Boiling Water About 2 cups ice cubes or crushed ice DIRECTIONS:  In a medium bowl, dissolve the jello in 1 cup boiling water, stirring 3-5 minutes.  Add 1 1/2-2 cups ice and stir until the jello starts to thicken; about 3 minutes. Remove any unmelted ice.  In a small bowl, beat the cream cheese with a mixer until smooth.  Add a small amount of the jello (2 tablespoon or so) to the cream cheese.  Beat until smooth and creamy.  Add the cheese mixture to the rest of the jello; beat on high until foamy.  Pour into servings dishes and chill until set.  TIP:  You can also do layers of this and layer them to make a great looking (and tasting) parfait! 

MC's Alternative Crack Slaw

As weird as it sounds, I'm a big fan of crack slaw, just without the "slaw" part. I've never been a fan of cabbage, or cole slaw , or stringy lettuce that seems to serve no real purpose. I do however love everything else contained in the crack slaw, so I set out to make my own version of crack slaw... minus the slaw. This is my version, that I wanted to share with others who may also share my strange aversion to the "slaw" part of crack slaw... M.C.'s Alternative Crack Slaw INGREDIENT LIST: 1 lb . OK, so I am a huge fan of chicken wings, and an even bigger fan of bold flavors. This recipe definitely hits that criteria! This is my Go-To chicken wing recipe and so far I haven't met anyone who didn't love it!!! There are any number of tweaks you can do to this recipe to make it your own, but stick to the recipe and you're assured a great snack, or meal if you down as many of these bad boys as I do in one sitting! Cheesey CauliTots

Cheesey CauliTots... perfect for those who are missing being able to have tater tots. These are a good substitute, although you shouldn't expect that they'll have the same "crunch" of a tater tot. Great as a side dish or an appetizer, you can serve with your dipping sauce of choice, or even melt cheese on top of them. Delicious!  Ingredients 1 medium head of cauliflower 2 Tbsp heavy cream 3 Tbsp butter 1/3 cup shredded sharp cheddar 4 egg whites salt & pepper to taste Instructions - Clean and trim the cauliflower; Put the florets to a microwave safe bowl.  - Add the heavy cream and butter to the bowl and microwave for 5 minutes.  - Add the cauliflower and cheese to a Vitamix or food processor and blend until it reaches the consistency of cooked oatmeal. - Season with salt and pepper, to taste.  - Chill in refrigerator for at least 30 minutes.  - While mixture is chilling, whip the egg whites to a stiff peak.  - Once chille...

Low Carb Keto Breaded Garlic Chicken Thighs

A delicious and easy way to jazz up your chicken, especially if you miss breaded chicken. Even non-Keto or non-LCHFers love this dish, and it tastes just as good as leftovers the next day! You can't go wrong with this recipe. For those who don't like garlic, you can leave out the garlic powder and use salt and pepper, and you can use regular Old Bay spice instead of garlic flavored.  And of course if you prefer a different flavor of Pork Rind, you can certainly swap out whichever flavor you like best.  Ingredients: 1 pound of chicken thighs Pink Himalayan Sea Salt Garlic Old Bay Spice (Original can be used also) Garlic Powder 4 ounce bag of BBQ pork rinds (Original or any other flavor can be used if you prefer) 2 eggs Directions: 1.
